Meal Block – Who Needs An Idea For A Quick & Easy Lunch?

Meal Block – it’s a real thing. Like writer’s block when you need some ideas for a quick lunch that can be prepped ahead of time but have no idea what to make. I too suffer from Meal Block and Instant Asian Noodle Soup in a jar is one idea that has proven to be a keeper in my lunch rotation. It is quick, easy, TASTY, and economical. Interested? Things You Will Need:

  • Four (4) Mason Jars (I am using 12 oz. Pakshe Mason Jars https://amzn.to/44UbvPy)
  • Chicken Bouillion Cubes
  • Chicken Breast (I used Great Value Canned Chunk Chicken Breast, but feel free to use any cooked chicken.)
  • Rice Noodles (I used Kame Pad Thai Express Noodles https://amzn.to/3KjN44s)
  • Coleslaw Mix (I used Little Salad Bar Classic Cole Slaw)
  • Toasted Sesame Oil (I used Oi! Toasted Sesame Oil https://amzn.to/3KcV4US)
  • Spicy Chili Crisp (I used Laoganma https://amzn.to/4bPVAUN.)
  • Cilantro (optional)
  • Dissolvable Labels (also optional, but definitely useful…they wash away when you wash your jar https://amzn.to/3UX3YLv.)

Now, we layer.

With this recipe it doesn’t matter how you layer your ingredients, but this is how I did it:

Chicken Bouillion (1/2 cube for each jar)

Chicken (12.5 oz can divided)

Spicy Chili Crisp (1/2 tsp per jar – adjust to taste)

Rice Noodles (There are 2 little packages of noodles inside the main package, cut those in half and add one half to each jar.)

Cole Slaw Mix (1/2 cup per jar, +/- to taste)

Toasted Sesame Oil (1/2 tsp per jar)

Cilantro (Optional, but it adds a fresh punch to the soup. I just tear up a few leaves and add to the jar.)

Add your little label. (I write what is in the jar and the date I made it. They are good for 5 days in the refrigerator.)

Now, admire your handiwork and be proud of yourself for a job well done prepping lunches and saving money!

When you’re ready to eat, add a cup of hot/boiling water to the jar and let it sit for 2 minutes. (I add hot water from the coffee machine, and it works great!)
